FINNISH CRANBERRY WHIP

Preparation Method :
- Put the cranberries, water, sugar and lemon peel in a 6 cups dish. Cover with a plate and cook on Full for 6 - 8 minutes, stirring twice and crushing the fruit. Allow to cool completely.
- Whip the creams together until thick. Beat the egg whites to stiff peaks.
- Fold the cream and egg whites alternately into the cranberries. Transfer to 6 - 8 individual dishes. Chill lightly before serving.

- 150 ml whipping cream
- 150 ml double cream
- 2250 grams cranberries, thawed if frozen
- 150 ml water
- 150 grams castor sugar
- 1 teaspoon finely grated lemon peel
- 2 large egg whites
