CRANBERRY AND ORANGE WHIP

Preparation Method :

  • Put the cranberries, water, sugar, orange peel and lemon peel in a 6 cup dish. Cover with a plate and cook on Full for 6 - 8 minutes, stirring twice and crushing the fruit. Allow to cool completely.
  • Whip the creams together until thick. Beat the egg whites to stiff peaks.
  • Fold the cream and egg whites alternately into the cranberries. Transfer to 6 - 8 individual dishes. Chill lightly before serving.

INGREDIENTS

  • 150 ml whipping cream
  • 150 ml double cream         
  • 250 grams cranberries, thawed if frozen
  • 150 ml water
  • 150 grams castor sugar
  • 1 teaspoon finely grated lemon peel
  • 2 teaspoons grated orange peel
  • 2 large egg whites
