APRICOT COULIS

Preparation Method :

  • Place the apricots in a dish with 50 ml of the water. Cover with plastic wrap and slit it to allow steam to escape. Cook on Full for 10 minutes or until the fruit is tender.
  • Transfer to a food processor or blender and work to a puree, add in another 50 ml of water if needed.
  • Transfer to a 4 cup bowl with the sugar. Mix the cornflour smoothly with the remaining water.
  • Add to the puree in the bowl. Cook, uncovered, on Full for 3 minutes, whisking every 30 seconds.
  • When the mixture has thickened and clear. Stir in the vanilla and lemon juice and use cold.

INGREDIENTS

  • 250 ml cold water
  • 1 teaspoon vanilla essence  
  • 1 teaspoon lemon juice    
  • 75 grams castor sugar
  • 1 tablespoon corn flour
  • 500 grams stoned apricots
