- Sift the flour into bowl and rub in the butter or margarine finely. Add the sugar and raisins.
- Beat the egg with the milk and vanilla essence and stir into the dry ingredients with a fork, mixing to a soft batter without beating.
- Divide between 10 cupcake papers and place 5 at a time on the microwave turntable. Cover loosely with kitchen paper. Cook on Full for 2 - 2 ½ minutes.
- Transfer to a wire rack to cool. Dust with sifted icing sugar when cold. Store in an airtight container.
