COCONUT CUP CAKES

Preparing for an excellent cake is made possible with coconut cup cakes. One of the best things about this mouth-watering cake is its perfect combination of ingredients that mainly suit for every food cravers. Once you taste it, you will surely ask for more bites.

6 minutes

Preparation Method :

  • Sift the flour into bowl and rub in the butter or margarine finely. Add the sugar and raisins.
  • Beat the egg with the milk and vanilla essence and stir into the dry ingredients with a fork, mixing to a soft batter without beating.
  • Divide between 10 cupcake papers and place 5 at a time on the microwave turntable. Cover loosely with kitchen paper. Cook on Full for 2 - 2 ½ minutes.
  • Transfer to a wire rack to cool. Dust with sifted icing sugar when cold. Store in an airtight container.

INGREDIENTS

  • 125 grams self-raising  flour
  • 50 grams butter or margarine
  • 50 grams castor sugar
  • 1 tablespoon desiccated coconut
  • 1 egg
  • 50 ml cold milk
  • ½ teaspoon vanilla essence
  • Icing  sugar, for dusting
