WINTER FRUIT CRUMBLE

Preparation Method :

  • Place apples, kiwifruit, passion fruit and sugar in a microwavable serving dish, mix to combine and sprinkle with water. Cover and cook on High for 5 minutes.
  • To make topping: Place the flour and butter in a food processor and process for 20 seconds or until mixture resembles fine breadcrumbs.
  • Transfer mixture to a bowl. Add breadcrumbs, brown sugar and soy grits or rolled oats and mix to combine. Sprinkle topping over fruit and cook on Medium for 5 - 8 minutes.
  • The crumble is delicious served with vanilla ice cream or whipped cream.

INGREDIENTS

  • 75 grams wholemeal flour
  • 3 tablespoons unsalted butter, chopped
  • 150 grams slices pumpernickel bread, made into crumbs
  • 2 tablespoons brown sugar
  • 3 tablespoons soy grits or rolled oats    
  • 500 grams red-skinned apples, cored, peeled and sliced
  • 2 kiwifruit, sliced
  • 2 passion fruit
  • 1 tablespoon sugar
  • 2 tablespoons water
