RHUBARB AND STRAWBERRY CRUMBLE

- Place rhubarb into a microwavable dish, sprinkle with sugar, cover and cook on High for 3 - 5 minutes, stir, then cook for 2 more minutes. Scatter strawberries over cooked rhubarb.
- To make topping, place flour and butter in a food processor and process for 20 - 30 seconds or until mixture resembles fine breadcrumbs.
- Add muesli, wheat germ, burghul (cracked wheat) and nutmeg and using the pulse process briefly to combine.
- Sprinkle topping over fruit and cook on Medium for 5 minutes. Serve crumble hot with thick cream, vanilla ice cream.
INGREDIENTS
- 100 grams toasted muesli
- 1 tablespoon wheat germ
- 1 tablespoon cracked wheat
- 500 grams rhubarb, trimmed and pink parts only cut into small pieces
- 50 grams brown sugar
- 250 grams strawberries, quartered or halved
- 75 grams wholemeal flour
- 50 grams unsalted butter, cubed
- ½ teaspoon ground nutmeg
