- Thoroughly rinse a spring form tin and leave wet.
- Melt the butter or margarine, uncovered, on Defrost for 2 minutes.
- Stir in the sugar and biscuit crumbs. Press evenly over the base of the tin. Chill while preparing the cake filling.
- To make the filling: Put the blue berries into a dish and sprinkle with half the sugar.
- Put the gelatine into a basin and stir in the water. Stand for 5 minutes until softened. Melt, uncovered, on Defrost for 4 minutes.
- In separate bowl, beat the cheese until soft and fluffy, then work in the gelatine, egg yolks, lemon juice and remaining sugar.
- Whisk the egg whites to stiff peaks. Fold into the cheese mixture alternatively with the sharon fruit. Spoon over the biscuit base and chill overnight.
- To serve, run a knife round the side to loosen, then unclip the tin and remove the sides.
