SIMNEL CAKE
The simnel cake is loaded with perfect ingredients like sweet cherry, mixed dried fruit, apricots, sweet butter, walnuts and other flavorings. With its perfect combination of delectable ingredients, you will surely enjoy its every piece of cake and best suited for all servings

Preparation Method :
- Put the sherry and brandy in a large mixing bowl. Cover and cook on Full for 4 minutes until the mixture just begins to bubble.
- Add the spice, vanilla essence, 2 teaspoons brown sugar, the dried fruit, mixed peel, cherries, apricots, dates, orange peel and walnuts.
- Mix thoroughly. Cover with a plate and warm through on Defrost for 10 -15 minutes, stirring 3 times. Leave at least for 10 hours for the flavours to mature.
- Closely line a soufflé dish with plastic wrap, allow it to hang very slightly over the edge.
- Stir in the butter, brown sugar, flour and eggs into the cake mixture. Spoon into the prepared dish and cover loosely with kitchen paper.
- Cook on Defrost for 30 minutes, turning four times. Allow to stand in the microwave for 10 minutes.
- Cool to lukewarm, then transfer to a wire rack carefully by holding the clingfilm.
- Peel away the clingfilm when the cake is cold. Wrap in a double thickness of greaseproof paper to store.
- Store in a cool place for about 2 weeks before covering and icing.
- The day before serving, cut the cake in half to make two layers.
- Brush both cut sides with melted apricot jam and sandwich together with the almond paste rolled out to a thick round.
- Decorate the top with miniature Easter eggs and chicks.

- 250 grams almond paste
- 50 grams chopped walnuts
- 150 grams sweet butter, melted
- 150 grams dark soft brown sugar
- 150 grams self-raising flour
- 3 small eggs
