SEED CAKE

The seed cake is packed with perfect ingredients such as caraway seeds, butter, grated nutmeg, lemon juice, and other palatable flavorings. Every ingredient is extremely accessible and its baking procedures are extremely fast and easy. You can instantly prepare this for at least 12 minutes.

Preparation Method :

  • Closely line the base and side of a soufflé dish with plastic wrap, allowing it to hang very slightly over the edge.
  • Sift the flour into a bowl and rub in the butter or margarine.
  • Add the brown sugar, lemon peel, caraway seeds and nutmeg and mix in the eggs and milk with a fork to form a smooth, fairly soft batter.
  • Transfer to the prepared dish and cover loosely with kitchen paper.
  • Cook on Full for 10 minutes, turning the dish twice or until the cake has risen to the top of the dish.
  • Allow to stand for 5 minutes, then invert on to a wire rack. When completely cold, peel away the clingfilm, then turn the cake the right way up.
  • Combine the icing sugar and lemon juice to a paste. Spread over the top of the cake.

INGREDIENTS

  • 250 grams self-raising  flour
  • 125 grams butter or margarine
  • 150 grams light soft brown sugar
  • Finely grated peel of 1 lemon
  • 2 tablespoons caraway seeds
  • 2 teaspoons grated nutmeg
  • 2 eggs, beaten
  • 150 ml cold milk
  • 5 tablespoons icing  sugar, sifted
  • 1 tablespoon lemon juice
