RICH CHRISTMAS CAKE

Rich Christmas cake – the best choice for all! This microwave recipe is loaded with perfect ingredients that truly match to your preferences. This recipe contains brandy, vanilla, orange, sweet butter, dried apricots, cherries, chopped walnuts and other palatable ingredients and flavorings.
Makes :
1 Large Family Cake

Preparation Time :
35 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Put the sherry and brandy in a large mixing bowl. Cover and cook on Full for 4 minutes until the mixture just begins to bubble.
  • Add the spice, vanilla essence, brown sugar, dried fruit, mixed peel, cherries, apricots, dates, orange peel and walnuts. Mix thoroughly.
  • Cover and warm through on Defrost for 10 -15 minutes, stirring 3 times. Leave at least for 10 hours for the flavours to mature.
  • Closely line a soufflé dish with plastic wrap, allow it to hang very slightly over the edge.
  • Stir in the butter, brown sugar, flour and eggs into the cake mixture. Spoon into the prepared dish and cover loosely with kitchen paper.
  • Cook on Defrost for 30 minutes, turning four times. Allow to stand in the microwave for 10 minutes.
  • Cool to lukewarm, then transfer to a wire rack carefully by holding the clingfilm.
  • Peel away the clingfilm when the cake is cold. Wrap in a double thickness of greaseproof paper to store.
  • Store in a cool place for about 2 weeks before covering and icing.

INGREDIENTS

  • 250 ml sweet sherry
  • 5 tablespoon brandy
  • 1 teaspoon mixed (apple-pie) spice
  • 1 teaspoon vanilla essence  
  • 2 teaspoons dark soft brown sugar
  • 350 grams mixed dried fruit  
  • 1 tablespoon chopped mixed peel
  • 1 tablespoon red glace cherries
  • 50 grams dried apricots
  • 50 grams chopped dates
  • Finely grated peel of 1 small orange
  • 50 grams chopped walnuts
  • 150 grams sweet butter, melted
  • 150 grams dark soft brown sugar
  • 150 grams self-raising  flour
  • 3 small eggs
