GINGERED HONEY CAKE

Preparation Method :

  • Closely line a 7 cups souffle dish with plastic wrap, allowing it to hang very slightly over the edge.
  • Put the marmalade, honey, eggs, oil and water in a food processor and blend until smooth.
  • Sift together all the remaining ingredients and spoon into the processor bowl. Run the machine until the mixture is well combined.
  • Transfer into the dish and cover lightly with kitchen paper. Cook on Full for 10 minutes or until the cake is well risen.
  • Allow to cool in the dizsh, then transfer to a wire rack by holding the clingfilm.
  • Peel away the clingfilm carefully and leave until completely cold.
  • Store in an airtight container for 1 day before cutting.

INGREDIENTS

  • 3 tablespoons orange marmalade
  • 250 grams clear dark honey
  • 2 eggs
  • 125 ml Cooking oil
  • 150 ml warm water
  • 250 grams self-raising  flour
  • 1 teaspoon baking soda
  • 3 teaspoons ground ginger
  • 2 teaspoons ground allspice
  • 1 teaspoon ground cinnamon
