Preparation Method :
- Line the bases and sides of two shallow dishes with clingfilm , allowing it to hang very slightly over the edge.
- Cream together the butter or margarine and sugar until the mixture is light and fluffy and the consistency of whipped cream.
- Beat in the eggs one at a time, add 1 tablespoon corn flour and coco powder with each. Fold in the remaining flour alternately with the milk using a large spoon.
- Spread equally into the prepared dishes. Cover loosely with kitchen paper. Cook one at a time on Full for 6 minutes. Allow to cool to lukewarm, then invert on to a wire rack.
- Peel away the clingfilm and leave until completely cold. Sandwich together with cream or chocolate spread.

- 25 grams corn flour. Sift the flour
- 25 grams cocoa powder
- 150 grams butter or margarine
- 175 grams castor sugar
- 3 eggs
- 3 tablespoons cold milk
- 3 tablespoons jam
- 120 ml double or whipping cream, whipped
- Icing sugar, sifted, for dusting
