BANANA SPICE CAKE WITH PINEAPPLE ICING

Spice up your day by mixing chopped pecan nuts, dates, margarine, brown sugar, bananas, baking powder, all spice, icing sugar, brown flour and eggs! Mix them all and you’ll arrive at the excellent dish of the year called as Banana Spice Cake with Pineapple Icing

30 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Closely line the base and side of a soufflé dish with clingfilm , allow it to hang very slightly over the edge.
  • Peel the bananas and thoroughly mash in a bowl. Beat in both fats. Mix in the sugar. Toss the baking powder and allspice with the flour.
  • Stir into the banana mixture with the egg, nuts and dates using a fork.
  • Spread smoothly into the prepared dish. Cover loosely with kitchen paper and cook on Full for 10 minutes, turning the dish 4 times.
  • Allow to stand for about 10 minutes. Transfer to a wire rack by holding the clingfilm.
  • Cool completely, then peel away the clingfilm and store the cake in an airtight container.
  • About 2 hours before serving, Mix a few drops of pineapple juice with icing sugar to a paste like icing in a bowl. Decorate with dried banana chips.

INGREDIENTS

  • 1 tablespoon chopped pecan nuts
  • 100 grams chopped dates    
  • 150 grams mixture of margarine
  • 150 grams dark soft brown sugar
  • 3 large ripe bananas
  • 2 teaspoons baking powder
  • 1 teaspoon ground allspice
  • 150 grams icing sugar
  • 250 grams malted brown flour
  • 1 large egg, beaten
