APRICOT AND ALMOND MUFFINS

Preparation Method :

  • To make topping, place almonds, coconut and rolled oats in a shallow microwavable dish and cook on High, stirring several times, for 2-4 minutes or until ingredients are golden in colour.
  • Place apricots, sugar, wheat germ, rolled oats, almonds, oil, milk and eggs in a bowl and mix to combine.
  • Sift flour and cinnamon into mixture and mix gently to combine.
  • Spoon half the mixture into a six-hole microwavable muffin tray. Sprinkle with half the topping and cook, elevated on High for 3 - 5 minutes.
  • Turn onto a wire rack to cool. Repeat to use remaining mixture. Serve warm with yogurt and fresh fruit.

  • 100 grams self-raising flour
  • 2 teaspoons ground cinnamon
  • 50 grams flaked almonds
  • 50 grams shredded coconut
  • 50 grams rolled oats  
  • 150 grams dried apricots, chopped
  • 75 grams brown sugar
  • 50 grams wheat germ
  • 25 grams rolled oats
  • 50 grams flaked almonds
  • 75 ml Cooking oil
  • 50 ml milk
  • 2 eggs, lightly beaten
