AMERICAN CHRISTMAS CAKE

Preparation Method :

  • Line the base of a microwavable ring mould with greaseproof paper and brush generously with melted butter.
  • Place Brazil nuts, pecans, raisins, dates, red cherries, green cherries, mixed peel and sugar into a bowl and mix to combine.
  • Sift flour and baking powder over fruit mixture, then add eggs and brandy and mix to combine.
  • Spoon mixture into prepared ring mould and press down firmly. Cook, on Medium for 20 minutes or until cooked.
  • Cover and stand for 5 minutes. Brush top of cake with egg white and leave to cool in mould.

  • 200 grams whole Brazil nuts
  • 200 grams whole pecans
  • 200 grams seedless raisins
  • 100 grams dessert dates, pitted
  • 100 grams glace red cherries
  • 100 grams glace green cherries
  • 100 grams mixed peel
  • 100 grams dark brown sugar
  • 100 grams flour
  • ½ teaspoon baking powder
  • 4 eggs, beaten
  • 1 tablespoon brandy
  • 1 egg white, lightly beaten
