ALMOND CAKE

The taste of almond cake is extremely best and suited for all. With its perfect combination of ingredients, you shouldn’t miss to prepare this for the whole family. Once you taste it, you will certainly spend more time to prepare for another batch of cakes.

Preparation Method :

  • Line the bases and sides of two shallow dishes with clingfilm , allowing it to hang very slightly over the edge.
  • Cream together the butter or margarine with almond essence and sugar until the mixture is light and fluffy and the consistency of whipped cream.
  • Beat in the eggs one at a time, add 1 tablespoon flour with each. Fold in the remaining flour alternately with the milk using a large metal spoon.
  • Spread equally into the prepared dishes. Cover loosely with kitchen paper. Cook one at a time on Full for 6 minutes. Allow to cool to lukewarm, then invert on to a wire rack.
  • Peel away the clingfilm and leave until completely cold. Sandwich together with smooth apricot jam and a thin round of almond paste.

INGREDIENTS

  • 100 grams self-raising  flour, Sift the flour
  • 3 tablespoons ground almonds
  • 150 grams butter or margarine
  • 175 grams castor sugar
  • 3 eggs
  • 3 tablespoons cold milk
  • 1 teaspoon almond essence
  • 3 tablespoons jam  
  • 120 ml double or whipping cream, whipped
  • Icing sugar, sifted, for dusting
