MIXED VEGETABLE CURRY

Mixed Vegetable Curry is one of the tempting dishes you can actually crave for! It’s simply delectable because it’s sprinkled with oil, coriander, cumin, garam masala, tomato puree, mixed vegetables, oil, tomatoes, plain yoghurt and caster sugar!

Preparation Time :
30 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Place in a 10 cups deep dish. Mix in all the ingredients except the rice and boiling water.
  • Cover and cook on Full for 20 minutes, stirring 3 times, until the vegetables are tender but firm to bite.
  • Remove the bay leaf, blend in the water and adjust the seasonings to taste. Serve with rice and a bowl of thick plain yoghurt.

INGREDIENTS

  • 1.5 kgs mixed vegetables, Cut into cubes and slices
  • 2 tablespoons Cooking oil
  • 2 garlic cloves, crushed
  • 4 tablespoons tomato puree 
  • 3 tablespoons garam masala
  • 2 tablespoons mild, medium or hot curry powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Salt to taste
  • 1 large bay leaf
  • 400 grams chopped tomatoes
  • 1 tablespoon castor sugar
  • 150 ml boiling water
  • 250 grams long-grain rice, boiled
  • Thick plain yoghurt, to serve
