MEATBALL CURRY

Preparation Method :

  • Mix together the beef, breadcrumbs, garlic and egg. Shape into 14 - 16 equal size balls and arrange round the edge of a deep dish (25 cm / 10 in diameter).
  • Mix together the remaining ingredients and spoon over the meatballs. Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
  • Cook on Full for 15 minutes, turning the dish 3 - 4 times. Allow to stand for 5 minutes. Uncover and baste the meatballs with the sauce.
  • Leave uncovered and reheat on Full for a further 2 minutes. Serve with boiled rice or mashed potato.

INGREDIENTS

  • 750 grams lean minced beef
  • 75 grams fresh white breadcrumbs
  • 1 garlic clove, crushed
  • 1 large egg, beaten
  • 300 ml condensed tomato soup
  • 75 grams tomatoes
  • 2 teaspoons soy sauce
  • 2 tablespoons mild curry powder
  • 3 tablespoon tomato puree 
  • 1 beef stock cube
  • 5 tablespoons mango chutney
  • Salt to taste
  • 3 tablespoons Cooking oil
  • Boiled rice or mashed potato, to serve
