LAMB AND SPINACH CURRY

Preparation Method :

  • Heat a microwave browning casserole dish on High for 2 minutes. Add oil, lamb and onions and stir well. Cover and cook for 2 - 4 minutes, stir, then cook for 2 more minutes.
  • Stir in curry paste, cover and cook for 30 seconds. Stir in tomatoes, spinach and coconut milk, cover and cook for 6 minutes.
  • Stir and cook on Medium for 6 minutes or until lamb is cooked. Stir in yogurt, cover and stand for 5 minutes.

INGREDIENTS

  • 400 grams tomatoes, undrained and mashed
  • 250 grams frozen spinach, thawed and drained   
  • 2 tablespoons peanut oil
  • 500 grams cubed shoulder or leg lamb
  • 2 white onions, finely chopped
  • 5 tablespoons mild curry paste
  • 150 ml coconut milk
  • 2 tablespoons natural yogurt
