FISH AND TOMATO CURRY

15 minutes

Preparation Method :

  • Wash fish and pat dry with absorbent kitchen paper, then cut into small pieces.
  • Heat a microwave browning casserole dish on High for 4 minutes, add oil, mustard seeds and fenugreek, cover and cook for 2 minutes - some of the seeds will pop.
  • Stir in onion, ginger and garlic, cover and cook for 2 minutes longer. Add curry paste and mix to combine.
  • Place fish around edge of dish, top with tomato and place yogurt in centre of dish. Cover and cook for 3 minutes.
  • Turn fish, cover and cook on Medium for 2 minutes, stir, then cook for another 2 minutes or until fish is cooked.

INGREDIENTS

  • 500 grams mullet, herring or gemfish fillets, boned and skinned
  • 2 tablespoons peanut oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon dried fenugreek
  • 1 white onion, cut in 12 wedges
  • 1 teaspoon finely chopped fresh ginger
  • 1 clove garlic, crushed
  • 2 tablespoons curry paste
  • 1 large tomato, cut in wedges
  • 250 ml natural yogurt
