CHICKEN CURRY

Preparation Method :

  • Place oil and onion in a microwavable casserole dish, cover and cook on High for 2 minutes.
  • Place chicken around edge of dish and stir curry paste into centre. Add carrot to centre of dish, cover and cook for 4 minutes.
  • Stir in peanut butter, tomatoes and stock cube, cover and cook for further 6 minutes.
  • Add green beans, stir, cover and cook on Medium for 10 minutes or until vegetables and chicken are cooked. Stir in cream and serve hot Chicken Curry.

INGREDIENTS

  • 1 tablespoon peanut oil
  • 1 onion, finely chopped
  • 2 boneless chicken breast fillets, trimmed and halved
  • 2 boneless chicken thighs, trimmed and halved
  • 2 tablespoons curry paste
  • 1 carrot, thinly sliced
  • 2 tablespoons crunchy peanut butter
  • 1 canned tomatoes, undrained and mashed
  • 1 chicken stock cube, crumbled
  • 200 grams green beans, sliced
  • 2 tablespoons cream
