APPLE, RED TOMATO AND APRICOT CHUTNEY

Preparation Method :

  • Put the apples, red tomatoes and onion in a 11 cups bowl. Mix in the salt and water. Cover and cook on Full for 6 minutes.
  • Tie the spice and bay leaf in a piece of cloth and then add it to the apple mixture with all the remaining ingredients.
  • Cook, uncovered, on Full for at least 40 minutes, stirring every 5 minutes or until the chutney thickens to the consistency of jam.
  • The chutney can be cooked for further until the desired thickness is reached. Remove and discard the bag of spices.
  • Cover when cold and leave overnight in the cool for the flavours to mature. Transfer to pots and cover.

INGREDIENTS

  • 250 grams coarsely chopped cooking apples
  • 250 grams coarsely chopped red tomatoes
  • 1 large onion, grated
  • 1 tablespoon salt
  • 5 tablespoons water
  • 1 tablespoon mixed pickling spice
  • 1 bay leaf
  • 300 ml malt or cider vinegar
  • 250 grams dark soft brown sugar
  • 2 garlic cloves, crushed
  • 125 grams chopped dates
  • 125 grams coarsely chopped apricots
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon mixed spice
