TEX-MEX AND AVOCADO CHICKEN

Preparation Method :

  • Score the flesh of each drumstick in 2 - 3 places. Arrange in a dish, fleshy parts towards the edge.
  • Cover with clingfilm and slit it to allow steam to escape. Cook on Full for 4 minutes.
  • Halve the avocado and scoop out the flesh. Mash finely with the chilli sauce and lime juice. Uncover the chicken and coat with the avocado mixture.
  • Top with the tomatoes and sprinkle with the salt. Cover as before and cook on Full for 4 minutes.
  • Allow to stand for 2 minutes and serve with tortilla chips.

INGREDIENTS

  • 250 grams chicken drumsticks, skinned
  • 2 tomatoes, blanched, skinned and coarsely chopped
  • 1 ripe small-medium avocado
  • 2 teaspoons chilli sauce
  • 2 teaspoons fresh lime juice
  • Salt to taste
  • Tortilla chips, to serve
