SPICY CHICKEN WITH COCONUT AND CORIANDER

Searching for new recipe, stop and learn how to cook spicy chicken with coconut and coriander! This special recipe is filled with perfect seasonings and ingredients that can never resists by any food cravers. Once you taste it, you will jump up high because of its outstanding taste.

Preparation Method :

  • Skin the chicken. Arrange round the edge of a deep dish, pushing the pieces closely together so they fit comfortably.
  • Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook for 10 minutes, turning the dish twice.
  • Place the coconut in a bowl with all the remaining ingredients except the rice. Stir well. Uncover the chicken and coat with the coconut mixture.
  • Cover and cook for about 10 minutes, turning the dish for at least 4 times. Serve in deep plates on a mound of rice with chutney handed separately.

INGREDIENTS

  • 1.25 kgs chicken portions
  • 3 tablespoons desiccated coconut
  • 1 green chilli, seeded and chopped
  • 1 garlic clove, crushed
  • 2 onions, grated
  • 1 teaspoon turmeric
  • 1 teaspoon ground ginger
  • 2 teaspoons mild curry powder
  • 100 grams coarsely chopped coriander (cilantro)
  • 150 ml canned coconut milk
  • 125 grams cottage cheese with chives Salt
  • 150 grams long-grain rice, boiled
  • Chutney, to serve
