SHADES-OF-THE-EAST CHICKEN

One of the best microwave recipes is the shades of the east chicken. This recipe is filled with appetizing ingredients like chicken breasts, salted peanuts, corn flour and other added seasonings. If you are planning to prepare this, then your family will surely enjoy their meals.

Preparation Method :

  • Heat the oil in a 25 cm / 10 in diameter casserole dish. Cook, uncovered, on Full for 1 minute. Add the onions and garlic and cook uncovered, on Full for 3 minutes, stirring twice.
  • Mix in the chicken cook, uncovered, on Full for 5 minutes, stirring with a fork every minute.
  • Sprinkle in the corn flour. Add in all the remaining ingredients except the peanuts and tomatoes.
  • Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook on Full for 15 minutes, turning the dish four times.
  • Allow to stand 5 minutes. Stir round and garnish the peanuts and tomato wedges before serving.

INGREDIENTS

  • 1 kg boned chicken breasts, skinned and cut into narrow strips
  • 3 tablespoons salted peanuts, coarsely-chopped
  • 1 tablespoon peanut
  • 3 medium onions, chopped
  • 2 garlic cloves, crushed
  • 2 teaspoons mild curry paste
  • ½ teaspoon ground coriander (cilantro)
  • ½ teaspoon ground ginger
  • Seeds from 5 cardamom pods
  • 2 tomatoes, cut into wedges
  • 1 tablespoon cornflour  
  • 3 tablespoons crunchy peanut butter
  • 150 ml water
  • Salt to taste
