PENANG PEANUT CHICKEN

10 minutes

Preparation Method :

  • Score the flesh of each thigh in 2 - 3 places. Arrange in a 3 cups round dish. Cover with clingfilm and slit it to allow steam to escape.
  • Cook on Full for 4 minutes. Allow to stand for 2 minutes. Uncover. Mix together the remaining ingredients and spoon over the chicken.
  • Cook, uncovered, on Defrost for 4 minutes. Stir round. Cover as before and cook on Full for 2 minutes. Allow to stand for 2 - 3 minutes before eating.

INGREDIENTS

  • 250 grams skinned chicken thighs
  • 3 tablespoons smooth peanut butter
  • ¼ teaspoon paprika
  • 1 garlic clove, crushed
  • 3 teaspoons desiccated coconut
  • 5 tablespoons milk
  • 1 tablespoon lime juice
