COUNTRY CAPTAIN

Stop craving for new appetizing recipe with country captain! This recipe can be easily prepared within 30 minutes and its ingredients are extremely accessible. With its simple cooking procedures, you and your friends will surely enjoy the meal without incurring too much effort.

Preparation Method :

  • Put the butter or margarine in a 30 cm / 12 in diameter casserole dish. Heat, uncovered, on Full for 2 minutes.
  • Add the onions and celery and stir well. Cook, uncovered, on Full for 2 minutes, stirring twice. Add the chicken joints and toss in the butter and vegetable mixture until well coated.
  • Sprinkle with the flour, curry powder, almonds, pepper and sultanas. Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
  • Cook on Full for 10 Minutes. Combine the salt with the tomatoes and sugar. Uncover the chicken and spoon the tomatoes over.
  • Cover as before and cook on Full for 15 minutes, turning the dish twice. Allow to stand for 5 minutes before serving with the rice.

INGREDIENTS

  • 1.5 kgs chicken joints, skinned
  • 400 grams chopped tomatoes
  • 250 grams long-grain rice, boiled
  • 50 grams butter or margarine
  • 2 onions, chopped
  • 1 celery stalk, chopped
  • 1 tablespoon all-purpose flour
  • 1 tablespoon mild curry powder
  • 3 tablespoons almonds, blanched, skinned, halved and lightly toasted
  • 1 small green (bell) pepper, seeded and finely chopped
  • 3 tablespoons sultanas
  • Salt to taste
  • Pinch of sugar
