COQ AU VIN

Coq Au Vin – a special dish for all occasions! This recipe is not so hard to prepare because of its simple ingredients and flavorings. If you are planning to have this in your daily servings, simply follow its precise cooking procedures and see check its irresistible taste.

Preparation Method :

  • Put the butter or margarine in a 30 cm / 12 in diameter casserole dish. Heat, uncovered, on Full for 1 minute.
  • Add the chicken pieces and turn them over once so that all pieces are coated with butter but keep in a single layer. Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
  • Cook on Full for 15 minutes, turning the dish three times. Uncover and sprinkle the chicken with the onion and garlic.
  • Gradually mix the flour smoothly with the wine, whisking, if necessary, to remove lumps. Crumble in the stock cube and add the salt.
  • Pour the wine mixture over the chicken. Surround with the shallots or onions and sprinkle with the parsley and thyme.
  • Cover as before and cook on Full for 20 minutes, turning the dish three times. Allow to stand for 5 minutes. Eat with boiled potatoes and Brussels sprouts.

INGREDIENTS

  • 50 grams butter or margarine
  • 1.5 kgs chicken joints, skinned
  • 1 large onion, finely chopped
  • 1 garlic clove, crushed
  • 2 tablespoons plain (all-purpose) flour
  • 300 ml dry red wine
  • 1 beef stock cube
  • Salt to taste
  • 12 shallots or pickled onions
  • 3 tablespoons chopped parsley
  • ¼ teaspoon dried thyme
  • Boiled potatoes and Brussels sprouts, to serve
