CHINESE RED COOKED CHICKEN

Show off your cooking skills through preparing Chinese red cooked chicken. This special and mouth-watering dish is filled with perfect ingredients to improve its delicious taste and aroma. Once you taste it, you will surely crave for more bites because of tempting effects.

25 minutes

Preparation Method :

  • Slash the fleshy parts of the drumsticks and arrange round the edge of a deep dish with the bony ends pointing towards the centre.
  • Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook for 10 minutes, turning the dish 3 times.
  • Mix together all the remaining ingredients, including the mushrooms and spoon over the chicken.
  • Cover as before and cook for 15 minutes. Allow to stand for 5 minutes before serving.

INGREDIENTS

  • 1 kg chicken drumsticks
  • 6 Chinese dried mushrooms , soaked in hot water for about 30 minutes, drained
  • 1 large onion, grated
  • 4 tablespoons finely chopped preserved ginger
  • Grated peel from 1 tangerine or similar loose-skinned citrus fruit
  • 50 ml soy sauce
  • 75 ml sweet sherry
  • 1 tablespoon black treacle (molasses)
