Preparation Method :
- Place chicken and sweet potatoes in a microwavable casserole dish. Place garlic, oil and vinegar in a bowl, mix to combine and pour over chicken. Cover and cook on High for 6 minutes.
- Stir in salsa or taco sauce and stock, cover and cook on Medium for 7 - 10 minutes. Stir in red and green pepper and cook for 10 minutes longer.

- 500 grams boneless chicken breast or thigh fillets, halved
- 500 grams orange sweet potatoes, cut into small cubes
- 2 cloves garlic, crushed
- 2 tablespoons IDHAYAM sesame oil
- 1 tablespoon cider or white wine vinegar
- 400 ml bottled tomato salsa or taco sauce
- 100 ml chicken stock
- ½ red pepper, sliced
- ½ green pepper, sliced
