CHICKEN WITH GOLDEN DRAGON SAUCE

Chicken with golden dragon sauce – the best choice for all special occasions. This special recipe is loaded with perfect ingredients like lemon juice, apricot jam, Chinese noodles, hot pepper sauce and other delicious flavorings. With is golden dragon sauce, the dish appears tastier and juicier.

Preparation Method :

  • Incise the thick parts of the chicken joints in several places with a sharp knife, dust with flour, then arrange in a deep dish.
  • Thoroughly stir in all the ingredients. Pour over the chicken. Cover the dish with kitchen paper and leave to marinate in the refrigerator for about 5 hours, turning the joints.
  • Arrange the incised sides uppermost, then cover the dish with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
  • Cook for about 20 minutes, turning the dish . Serve on a bed of noodles and coat with chicken sauce from dish.

INGREDIENTS

  • 250 grams fleshy chicken joints, skinned
  • All-purpose flour
  • 1 small onion
  • 2 garlic cloves, crushed
  • 2 tablespoons soy sauce
  • 2 tablespoons medium-dry sherry
  • 2 tablespoons groundnut oil
  • 3 tablespoons lemon juice
  • 3 tablespoons light soft brown sugar
  • 3 tablespoons melted and strained apricot jam
  • 1 teaspoon ground coriander
  • 3 - 4 drops hot pepper sauce
  • Bean sprout salad and Chinese noodles, to serve
