CHICKEN MARENGO

Chicken Marengo – start to prepare this perfect dish at hand and see how it adds spice to your meal. This recipe is loaded with appetizing ingredients like white wine, chicken piece and other flavorings. Every piece is extremely delicious and with tempting aroma.

Preparation Method :

  • Place the chicken in a 30 cm / 12 in diameter casserole dish (Dutch oven). Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
  • Cook on Full for 15 minutes, turning the dish twice. Meanwhile, make the sauce conventionally. Pour the oil into a saucepan and add the onion and garlic.
  • Sauté gently until lightly golden. Stir in the flour, then add the tomatoes, stock, puree and brown sauce.
  • Cook, stirring, until the sauce comes to the boil and thickens. Stir in all the remaining ingredients and pour over the chicken.
  • Cover as before and cook on Full for 20 minutes, turning the dish 3 times. Allow to stand for 5 minutes. Serve with creamed potatoes and a mixed salad.

INGREDIENTS

  • 1.5 kgs chicken pieces
  • 1 tablespoon Cooking oil
  • 1 large onion, finely chopped
  • 1 garlic clove, crushed
  • 2 tablespoons all-purpose flour
  • 5 tomatoes, blanched, skinned and chopped
  • 150 ml hot stock
  • 3 tablespoons tomato puree (paste)
  • 1 tablespoon brown table sauce
  • 50 grams mushrooms
  • 12 small stoned black olives
  • 2 teaspoons dark soft brown sugar
  • 4 tablespoons chopped parsley
  • 3 tablespoons dry white wine
  • Salt to taste
  • Creamed potatoes and mixed salad, to serve
