CHICKEN IN TOMATO AND CAPER SAUCE

If you want an instant recipe for your family and friends, chicken in tomato and caper sauce is your best choice. This recipe is entirely consists of special ingredients like mixed herbs and chicken and other seasonings that can never resists by any food lovers.

Preparation Method :

  • Dust the chicken joints with flour. Put the butter or margarine in a casserole dish. Heat, uncovered, on Full for 2 minutes.
  • Stir in the bacon, onions, cloves and capers. Cook, uncovered, on Full for 5 minutes, stirring twice. Add the chicken and toss until well coated with the butter or margarine mixture.
  • Cover with cling-film (plastic wrap) and slit it twice to allow steam to escape. Cook on Full for 15 minutes, turning the dish three times.
  • Uncover and add the remaining ingredients, mixing in well. Cover as before and cook on Full for 15 minutes. Allow to stand for 5 minutes before serving.

INGREDIENTS

  • 250 grams chicken joints, skinned
  • 1 tablespoon all-purpose flour
  • 50 grams butter or margarine
  • 1 tablespoon tomato puree (paste)
  • 1 tablespoon chopped basil leaves
  • 1 tablespoon chopped parsley
  • 3 rashers (slices) bacon, chopped
  • 2 large onions, chopped
  • 2 garlic cloves, crushed
  • 1 tablespoon capers, chopped
  • 400 grams tomatoes chopped
  • 1 tablespoon dark soft brown sugar
  • 1 teaspoon dried mixed herbs
  • Salt to taste
