CHICKEN IN MEXICAN MOLE SAUCE

Chicken in Mexican mole sauce is your best recipe choice if you are searching for an excellent family dish. This recipe consists of chicken breasts, butter, bell pepper and other delectable flavorings that match to your food cravings. This can also serve for all events.

Preparation Method :

  • Arrange the chicken round the edge of a deep dish. Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
  • Cook on Full for 5 minutes. Allow to stand while preparing the sauce. In a separate dish, heat the oil, uncovered, on Full for 1 minute.
  • Stir in the onion, green pepper and garlic. Cook, uncovered, on Full for 3 - 5 minutes, stirring twice. Stir in the flour, then the cloves, bay leaf, cinnamon, salt and tomato juice.
  • Cook, uncovered, on Full for 5 minutes, stirring every minute. Remove from the microwave. Add the chocolate and stir in thoroughly.
  • Cook, uncovered, on Full for 20 - 30 seconds. Uncover the chicken and coat with the hot sauce. Cover as before and cook on Full for 5 minutes.
  • Allow to stand for 5 minutes. Serve with the rice, forked with the garlic butter.

INGREDIENTS

  • 150 grams chicken breasts,skinned
  • 2 tablespoons Cooking oil
  • 1 large onion, finely chopped
  • 1 green (bell) pepper, seeded and chopped
  • 1 garlic clove, crushed
  • 2 tablespoons all-purpose flour
  • 3 whole cloves
  • 1 bay leaf
  • ½ teaspoon ground cinnamon
  • Salt to taste
  • 150 ml tomato juice
  • 50 grams plain chocolate, broken into pieces
  • 150 grams long-grain rice, boiled
  • 1 tablespoon garlic butter
