CHICKEN IN CREAM SAUCE WITH CELERY

Preparation Method :
- Separate the celery hearts and arrange over the base of a lightly buttered deep dish.
- In a separate dish, heat the butter or margarine for 45 seconds until it sizzles. Stir in the flour and gradually blend in the warm stock and cream.
- Cook for 5 minutes until thickened, whisking every minute. Stir in the Red Leicester, wine, mustard and chicken. Add salt and nutmeg to taste.
- Spoon the sauce over the broccoli. Sprinkle with Parmesan cheese and paprika. Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
- Reheat on Defrost for 10 minutes, serve hot.

- 400 grams celery hearts, drained
- 2 tablespoons butter or margarine
- 3 tablespoons all-purpose flour
- 150 ml warm chicken stock
- 150 ml single (light) cream
- 50 grams Red Leicester cheese, grated
- 2 tablespoons dry white wine
- 1 teaspoon mild made mustard
- 250 grams cooked chicken
- Ground nutmeg
- 3 tablespoons Parmesan cheese, grated
- Paprika
- Salt to taste
