CHICKEN GUMBO

Chicken gumbo is filled with perfect ingredients like butter, lemon, and other special seasonings. With its hot sauce, the dish becomes more enticing and delicious. Everyone loves its spicy taste and aroma effects; that is why they always prepare this regularly.

Preparation Method :

  • Put the butter in a 2.5 litres / 4 ½ pt / 11 cup casserole dish (Dutch oven). Heat, uncovered, on Full for 2 minutes.
  • Stir in the flour. Cook, uncovered, on Full for 5 minutes, stirring every minute, until the mixture is a light brown roux, the colour of a well-baked cookie.
  • Gradually blend in the hot stock. Slice each okra into eight pieces and add to the casserole with all the remaining ingredients except the chicken and rice.
  • Cover with clingfilm (plastic wrap) and slit it twice to steam to escape. Cook on Full for 10 - 15 minutes. Stir in the chicken. Cover as before and cook on Full for 15 minutes
  • Allow to stand for 5 minutes. Stir round and ladle into soup bowls. Add a mound of rice to each.

INGREDIENTS

  • 350 grams okra (ladies' fingers),topped and tailed  
  • 50 grams butter
  • 50 grams plain (all-purpose) flour
  • 1 litre hot chicken stock
  • 2 large onions, finely chopped
  • 2 garlic cloves, crushed
  • 2 large celery stalks, thinly sliced
  • 1 green (bell) pepper, seeded and chopped
  • Salt to taste
  • 2 teaspoons ground coriander (cilantro)
  • ½ teaspoon turmeric
  • 2 teaspoons ground allspice
  • 2 tablespoons lemon juice
  • 2 bay leaves
  • 1 teaspoon hot pepper sauce
  • 500 grams cooked chicken, chopped
  • 150 grams long-grain rice, boiled
