BANGKOK COCONUT CHICKEN

Bangkok Coconut Chicken is extremely delicious because of its main ingredients like chicken breasts, coriander, juice, lemon balm leaves, lime leaves, garlic, cold water, green chillies and salt! This could be the perfect microwave dish you’ve been waiting for!

20 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Arrange the chicken round the edge of a deep dish, leaving a hollow in the centre. Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
  • Cook for 5 minutes, turning the dish twice. Combine the coconut cream, lime juice and water, then stir in the garlic and salt and pour over the chicken.
  • Sprinkle on the lemon grass or lemon balm leaves, chillies to taste and lime leaves. Cover as before and cook for 10 minutes, turning the dish three times.
  • Allow to stand for 5 minutes. Uncover and stir in the coriander, then serve with the rice.

INGREDIENTS

  • 150 grams long-grain rice, boiled
  • 150 grams boned chicken breasts
  • 200 ml creamed coconut
  • 2 tablespoons chopped coriander (cilantro)
  • Juice of 1 lime
  • 1 stalk lemon grass, halved lengthways, or 6 lemon balm leaves
  • 6 green chillies
  • 4 - 5 fresh lime leaves
  • 2 tablespoons cold water
  • 2 garlic cloves, crushed
  • Salt to taste
