UPSIDE-DOWN CHEESE AND TOMATO PUDDING

Upside down cheese and tomato pudding – your best microwave recipe at all times! This recipe is filled with appetizing ingredients like butter, mustard powder, Cheddar cheese, cold milk and other special seasonings. Every piece of this recipe made your meal exciting and memorable.

Preparation Method :

  • Grease a deep round 1.75 litres / 3 pt / 7½ cups pudding basin with butter. Sift the flour, mustard powder and ½ teaspoon of the salt into a bowl.
  • Rub in the butter or margarine finely, then toss in the cheese. Mix to a soft consistency with the eggs and milk. Spread smoothly into the prepared basin.
  • Cook, uncovered for 5 minutes. Mix the tomatoes with the remaining salt. Place in a shallow bowl and cover with a plate.
  • Remove the pudding from the oven and carefully invert into a shallow dish. Cover with kitchen paper and cook for a further 2 minutes.
  • Remove from the oven and cover with a piece of foil to retain the heat. Put the tomatoes in the microwave and heat for 3 minutes.
  • Spoon over the pudding, sprinkle with the herbs and serve hot.

INGREDIENTS

  • 250 grams self-raising flour
  • 1 teaspoon mustard powder
  • 1 teaspoon salt
  • 100 grams butter or margarine
  • 100 grams Edam or Cheddar cheese, grated
  • 2 eggs, beaten
  • 150 ml cold milk
  • 4 large tomatoes, blanched and skinned and chopped
  • 1 tablespoon chopped parsley or coriander (cilantro)
