COD CASSEROLE WITH BACON AND TOMATOES

This Cod Casserole with Bacon and Tomatoes dish can completely give you a perfect and nutritious food. It has a lot of a lot of nutrients which you can surely enjoy. This dish will be prepare and cook within 50 minutes. It can give you a flavorful taste ever!

Preparation Method :

  • Put the butter or margarine in a Dutch oven. Heat, uncovered for at least 2 minutes. Mix in the gammon, onions and pepper.
  • Cook, uncovered, on Defrost for 10 minutes, stirring twice. Remove from the microwave.
  • Work in the tomatoes, breaking them down with a fork and stir in all the ingredients and seasoning.
  • Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook for 5 minutes. Add the fish and garlic.
  • Cover as before and cook on Medium for 10 minutes. Sprinkle with the breadcrumbs and trickle the oil over the top. Heat, uncovered for 1 - 2 minutes.

INGREDIENTS

  • 2 tablespoons butter or margarine
  • 250 grams gammon, coarsely chopped
  • 2 onions, sliced
  • 1 large green (bell) pepper, seeded and cut into strips
  • 1 kg tomatoes
  • 1 tablespoon mild continental mustard
  • 3 tablespoons Cointreau or Grand Marnier
  • Salt and freshly ground black pepper
  • 750 grams skinned cod fillet, cubed
  • 2 garlic cloves, crushed
  • 5 tablespoons toasted brown breadcrumbs
  • 1 tablespoon peanut oil
