AUBERGINE AND BEEF CASSEROLE

Preparation Method :

  • Put the aubergines into a large bowl and mix in the salt and boiling water.
  • Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook on Full for 10 minutes.
  • Allow to stand for 2 minutes. Drain thoroughly, then place in a blender or food processor and process to a puree.
  • Grease a shallow dish. Mix together the aubergine puree, onion, beef, half the breadcrumbs, the pepper sauce and salt and freshly ground black pepper to taste.
  • Spread the mixture into the casserole. Sprinkle with the remaining breadcrumbs and flakes of butter. Cook, un-covered, on Full for 10 minutes.
  • Before serving, Flash briefly under a hot grill (broiler) to crisp the top. Serve with the rice.

INGREDIENTS

  • 250 grams American long-grain rice, boiled
  • 500 grams lean minced beef
  • 100 grams fresh white breadcrumbs
  • ½ teaspoon hot pepper sauce
  • 1 onion, finely grated
  • 2 tablespoons butter
  • Salt and freshly ground pepper
  • 4 aubergines, Top, tail and peel and cube the flesh.
  • 3 tablespoons boiling water
