ORANGE GINGERBREAD

Preparation Method :

  • Closely line the base and side of a souffle dish with clingfilm , allowing it to hang very slightly over the edge.
  • Sift the flour, ginger, allspice and bicarbonate of soda into a mixing bowl.
  • Put the syrup, treacle, sugar and fat in another bowl and heat, uncovered, on Full for 3 minutes or until the fat has just melted. Stir well to blend.
  • Mix with a fork into the dry ingredients with the orange peel, egg and milk. When well combined, transfer to the prepared dish and cover lightly with kitchen paper.
  • Cook on Full for 4 minutes until the gingerbread is well risen with a hint of a shine across the top. Allow to stand 10 minutes.
  • Transfer to a wire rack by holding the clingfilm. Peel away the clingfilm and store the gingerbread in an airtight container for 1 day before cutting.

INGREDIENTS

  • 1 teaspoon ground allspice
  • 2 teaspoons baking soda
  • 150 grams golden syrup     
  • 150 grams all-purpose flour
  • 1 tablespoon ground ginger
  • 2 tablespoons black treacle (molasses)
  • 2 tablespoons dark soft brown sugar
  • Finely grated peel of 1 small orange
  • 3 tablespoons lard or white cooking fat  
  • 1 large egg, beaten
  • 75 ml cold milk
