FRUITED MALT BREAD

Fruited Malt Bread- is simply a delectable dish to ask for because it’s made with lots of its ingredients like malt extract, butter, flour, salt, yeast, skimmed, currants and raisins! This is really perfect because it appease to one’s taste!
Makes :
2 Loaf

Preparation Time :
45 minutes

Cooking Time :
35 minutes

Preparation Method :

  • Sift the flour and salt into a bowl. Toss in the yeast and dried fruit. Put the malt extract, treacle and butter or margarine into a small basin.
  • Melt, uncovered, on Defrost for 4 minutes. Add to the flour with the milk and enough water to make a soft dough.
  • Knead on a floured surface until smooth, elastic and no longer sticky. Divide into two equal pieces.
  • Shape each to fit a greased round or rectangular dish.
  • Cover the dishes, not the dough, with clingfilm (plastic wrap) and slit it to allow steam to escape.
  • Warm together on Defrost for 2 minutes. Allow to stand for 6 minutes. Repeat 3 - 4 times until the dough has doubled in size.
  • Remove the clingfilm. Place the dishes side by side in the microwave and cook, uncovered, on Full for 6 minutes.
  • Repeat once more. Allow to stand for 10 minutes. Invert on to a wire rack.
  • Store in an airtight container when completely cold. Slice and spread with butter.

INGREDIENTS

  • 4 tablespoons malt extract 
  • 1 tablespoon black treacle (molasses) 
  • 2 tablespoons butter or margarine 
  • 500 grams strong plain flour 
  • 2 teaspoons salt
  • 1 sachet easy-blend dried yeast 
  • 4 tablespoons mixed currants and raisins 
  • 3 tablespoons lukewarm skimmed milk
  • 150 ml lukewarm water 
  • Butter, for spreading
