VEAL TENDERLOIN WITH SWEET POTATO AND COURGETTE MOUSSELINE
This dish is perfectly made of the healthy ingredients such as sweet potatoes, tenderloin, onion, butter, tomatoes, springs thyme, and courgettes. This dish can be prepared in any type of special occasion like birthdays, anniversary and special date with someone.

Preparation Method :
- Brown the tenderloin in heated butter in your pressure cooker on a strong fire for 2 minutes Season and add thyme, bay leaf, water and 2 garlic cloves.
- Remove the tenderloin and add an unpeeled sliced onion. Skim the fat off, add a knob of butter and the peeled tomatoes.
- Cook for approximately 3 minutes, then add the vinegar and the clove. Season. Peel and slice the sweet potatoes and cut the courgettes into large pieces.
- Put these vegetables in the basket placed in the high position. Put the tenderloin on the vegetables. Close and cook for 8 minutes from the pressure cooker hissing.
- After cooking, keep the tenderloin warm and put the vegetables through the mixer, adding the cream. Check the seasoning. Cut the tenderloin and serve it on a warm platter.
- Pour over the juice strained through a fine sieve.
- Serve the mouseline in a vegetable dish.

- 200 grams butter
- 4 tomatoes
