PARMESAN VEAL ROLLS

Preparation Method :

  • Melt the butter in a small saucepan over low heat. Add the parsley, garlic, bread crumbs, Parmesan, eggs, salt, and pepper and mix well.
  • Lay the veal out on a clean work surface. Spread the bread crumb mixture on each slice of the veal. Roll up and secure with toothpicks.
  • Heat the remaining butter in a large frying pan over medium heat. Saute the onion until softened, 5 minutes. Add the diluted tomato paste and season with salt and pepper.
  • Place the veal rolls in the pan in a single layer. Cover and simmer over low heat, turning frequently, until the meat is tender and cooked through, about 10 minutes. Serve hot.

INGREDIENTS

  • 10 tablespoons butter
  • 3 tablespoons finely chopped fresh parsley
  • 3 cloves garlic, finely chopped
  • 200 grams fine dry bread crumbs
  • 200 grams freshly grated Parmesan cheese
  • 4 large eggs, lightly beaten
  • Salt and freshly ground black pepper
  • 15 small thin veal escalopes
  • 2 small onion, finely chopped
  • 4 tablespoons tomato paste
