ITALIAN VEAL AND POTATO WITH TOMATO SAUCE

Preparation Method :
- Grease ovenproof dish (2.25 litre/9 cup capacity). Boil, steam or microwave potato until tender; drain, cut potato into 5mm slices.
- Boil, steam or microwave spinach until just tender; drain, rinse.
- Heat butter and oil in pan, add veal and garlic, cook until browned all over.
- Place veal into prepared dish, top with spinach and potato slices, sprinkle with pepper and half the cheese.
- Pour tomato sauce around veal, sprinkle veal with remaining cheese.
- Cover, bake in moderately hot oven 20 minutes, remove cover, bake further 10 minutes or until heated through.
- Tomato Sauce: Heat oil in pan, add remaining ingredients, simmer, un-covered, 10 minutes.
INGREDIENTS
- 300 grams potato, peeled, chopped
- ½ bunch English spinach
- 50 grams butter
- 1 tablespoon peanut oil
- 4 veal steaks
- 1 clove garlic, crushed
- ½ teaspoon seasoned pepper
- 25 grams grated parmesan cheese
Tomato Sauce
- 5 grams pimiento-stuffed green olives, sliced
- 50 ml dry red wine
- 1 tablespoon chopped fresh oregano
- 1 teaspoon sugar
