CURRIED VEAL ROUSSETTE WITH CUCUMBERS

When it comes to the delectable dish, the Curried Veal Roussette with cucumbers is the best choice for you. This is made of healthy ingredients like veal, egg yolks, curry, pepper, chervil, onion, and vinegar. This dish will surely love by your kids and friends.

Preparation Method :

  • Blanch the veal cut into pieces for 2 minutes and cool it under cold water. Melt the butter in your pressure cooker, add the meat and turn it in the butter without browning it for 5 minutes Add the chopped onion and curry and mix well.
  • Add the vinegar with water. Season with salt, pepper and spices. Close and cook for 18 minutes, from the pressure cooker hissing. Keep the meat warm and reduce the heat.
  • Add the egg yolks and cream (do not boil). Strain the sauce through a fine sieve over the meat.
  • Cut the cucumbers to look like olives, blanch them and turn them in butter. Arrange them on the veal.
  • Sprinkle with sprigs of chervil.
