YORKSHIRE PUDDING

- Sift the flour and salt into a large basin.
- Break the egg into a saucer and then place the egg in the centre of the flour, whisking enough milk and water to get a beating consistency. Beat well and leave to stand for atleast 30 minutes.
- Heat the oven to Gas Mark 7/220°C/425°F.
- For small puddings, use 6 x 2.5cm bun trays and put a knob of dripping into each indentation.
- Place the tray in the oven until the fat is smoking hot. One large tin may also be used.
- Meanwhile, add the rest of the milk and water to make a batter. If making small puddings, take the bun tray from the oven and put 2 tablespoons batter into each indentation.
- Bake for 15-20 minutes. Or use a large tin, bake for 30 minutes, then cut the pudding into portions.

- 150 grams plain flour
- ½ teaspoon salt
- 1 large egg
- 150 ml full-cream milk, mixed with 150ml water
- Dripping or cooking fat
