YOGURT-MARINATED LAMB

Preparation Method :
- Marinate the lamb in a large bowl, mix thoroughly so that the meat is well coated. Cover and refrigerate for about 2-3 hours.
- Heat the oil in a heavy-based saucepan and add the whole spices. Fry for about half a minute, add in the marinated lamb mixture.
- Cook, stirring occasionally for 20-22 minutes or until the oil separates from the meat. Add the butter.
- Add the remaining whisked yogurt to the meat. Adjust seasoning with salt and pepper.
- Bring to the boil stirring continuously. Cover and simmer for another 20-22 minutes stirring occasionally.
- Add black pepper and the garam masala, mix well into the sauce.
- Serve it with Basmati Rice.
INGREDIENTS
- 550 grams boneless leg of lamb cut into bite-sized pieces
- ½ teaspoon garam masala
- 100 ml Greek yogurt, whisked with a cup of water to smooth consistency
- 50 ml Cooking oil
- 1 tablespoon butter
- Salt and freshly ground black Pepper, to taste
Whole Spices
- 2 bay leaves
- 2-3 cardamom pods, crushed
- 2-3 cloves
- ½ teaspoon cumin seeds
- ¾ inch cinnamon stick
Ground Spices
- ½ teaspoon cumin seeds
- ½ teaspoon fennel seeds
- 1 teaspoon ginger paste
- ½ teaspoon turmeric
- 100 ml Greek yogurt
