SHREDDED BEEF WITH ASPARAGUS
In preparing shredded beef with asparagus, you have marinade and meat then marinate for 20 minutes. The thick sauce will make your dish look yummy. You can top it with ring onion too. In plating you can put asparagus beside the shredded beef to make more pleasing to the eye.

- Cut the onions in half lengthwise, then cut each half lengthwise into four wedges.
- Snap; any tough ends off the asparagus and discard. Cut stalks diagonally into 5-cm (2-in) lengths.
- Combine Marinade ingredients and mix well into meat. Leave to marinate for about 20 minutes.
- Mix Sauce ingredients with water. Heat wok, add peanut oil and stir-fry onions over high heat for 1 minute.
- With a slotted spoon transfer onions to a plate, add the asparagus to the wok and stir-fry, tossing for 1 minute. Remove the asparagus to a plate.
- Add remaining tablespoons of oil to the wok and, when hot, add meat and stir-fry, tossing over high until it changes color. Put meat aside with onions.
- Wipe out the wok and return asparagus to it. Add hot water. Cover wok and cook for 3 minutes or until asparagus is tender but still crisp.
- Add Sauce mixture and stir until it boils and thickens slightly.
- Return beef and onions to the wok and toss together until heated through. Serve at once with rice.

- 2 teaspoons dark soy sauce
- 2 teaspoons corn flour
- 1 teaspoon sugar
- 4 teaspoons dry sherry
Sauce
- 4 teaspoons light soy sauce
- 4 teaspoons oyster sauce
- 2 teaspoons corn flour
